METHODS: One hundred and thirty five H.severusweighing 27±0.5g were randomly divided to three groups in triplicate: Groups 1 (G1) was fedwith basal diet, group 2 (G2) and group 3 (G3) were fed with basal diet supplemented with200 mg kg-1 D.salina or Astaxanthin respectively. After 6 weeks, digital photo were takenfrom 15 fishes of each group and skin and muscles samples were taken after euthanasia. Skinbeta carotene rate, lipid peroxidation of muscle (based on Malondialdehyde activity) as wellas skin and fins coloration pattern (a*, b*, Hue, L* and Chroma) were compared amonggroups. RESULTS: Skin beta-carotene rate significantly increased in G2 and G3 compare toG1 but, Lipid peroxidation rate were decreased in G2 and G3 compare to control (p<0.05).Although some improvement in color quality were observed in trunk area, there was nosignificant difference in color indicators among the groups (p>0.05). In the fin areas a* valuesignificantly increased in G2 and G3 compare to control also Hue and b* value significantlydecreased in G2 and G3 compare to control (p<0.05). Chroma significantly increased in G3compared with other (p<0.05). No significant difference were observed in L* between thegroups (p>0.05). CONCLUSIONS:Although the effect of Astaxanthin on skin carotenoid leveland skin and fins coloration was better compared with D. salina. However, because ofreasonable price, wide availability and the production of Dunaliella salina, it can be used asan alternative for Astaxanthin. }, keywords = {Astaxanthin,Beta Carotene,Dunaliella salina,Heros serverus}, title_fa = {مقایسه اثر آستاگزانتین و جلبک دونالیلا سالینا ‌(Dunaliella salina ) بر میزان کاروتنوئید پوست، پراکسیداسیون لیپید‌ها و رنگ ماهی سورم (Heros serverus)}, abstract_fa = {زمینـه مطالعه: محققین از دیرباز به دنبال جایگزین‌های مناسبی برای رنگ دانه‌های صناعی مانند آستاگزانتین بوده‌اند. هدف: لذا در این تحقیق اثر تجویز خوراکی آستاگزانتین و جلبک دونالیلا سالینا بر میزان بتاکاروتن پوست، رنگ پوست و باله‌ها و میزان پراکسیداسیون لیپید‌های عضله ماهی سورم (H.serverus)‌ مورد بررسی قرار گرفت. روش کار: به این منظور تعداد 135 قطعه ماهی با وزن ( ‌g 5/0± 27) به 3 تیمار در 3 تکرار تقسیم شدند: تیمار اول با غذای معمولی (‌1)G و دو تیمار دیگر به ترتیب با ‌mg/kg‌ 200 جلبک دونالیلا ‌)2(G‌ و ‌mg/kg‌‌200  آستاگزانتین ‌)3(G‌ تغذیه شدند. بعد از 6 هفته تغذیه از ماهی‌های هر تیمار عکس دیجیتال، نمونه پوست و عضله تهیه گردید. میزان بتاکاروتن پوست و (مالون‌­‌دی‌­‌آلدئید) ‌MDA‌ عضله و نیز شاخص‌های رنگ Hue, b*,a*,L*( و ‌)Chroma بین تیمارها مقایسه گردیدند. نتایج: میزان بتاکاروتن در تیمار‌های  ‌3G‌و ‌2G‌ نسبت به ‌1G‌ افزایش معنی‌داری را نشان داد (05/0.)p< میزان پراکسیداسیون لیپیدی در تیمار ‌2G‌ و ‌3G‌ کاهش معنی‌داری نسبت به تمیار شاهد نشان داد ‌(05/0)p<‌. در ناحیه‌ تنه اگرچه بعضی از شاخص‌های رنگ بهبود یافت ولی تفاوت معنی‌داری در بین تیمار‌ها مشاهده نشد ‌(05/0.)p> در ناحیه‌ باله‌ها شاخص‌های ‌a*‌ و ‌Hue‌ در تیمار‌های ‌2G‌ و ‌3G‌ به ترتیب افزایش و کاهش معنی‌داری نسبت به تیمار ‌1G‌ داشتند ‌(05/0.)p< شاخص ‌b*‌ در تیمار‌های ‌2G‌ و ‌3G‌ کاهش معنی داری نسبت به تیمار ‌1G‌ را نشان داد ‌(05/0.)p< شاخص Chroma‌ در تیمار ‌3G‌ افزایش معنی‌داری نسبت به دو تیمار دیگر نشان داد ‌(05/0.)p< شاخص ‌L*‌ در بین تیمار‌ها تفاوت معنی‌داری را نشان نداد (05/0)p>‌.  نتیجه‌گیری‌نهایی: طبق نتایج اگر‌چه تأثیر آستاگزانتین بر میزان بتاکاروتن و رنگ پوست بیشتر از جلبک دونالیلا می‌باشد‌، ولی با توجه به قیمت مناسب‌تر، در دسترس بودن و امکان تولید وسیع، از این جلبک می‌توان به عنوان یک جایگزین مناسب برای آستاگزانتین استفاده نمود.  }, keywords_fa = {آستاگزانتین,بتا کاروتن,جلبک دونالیلا سالینا,ماهی سورم}, url = {https://jvr.ut.ac.ir/article_36717.html}, eprint = {https://jvr.ut.ac.ir/article_36717_036cfc39da6d12ce558591865c0f9357.pdf} }
