With regards to important of fish and fish products as an important available resources of animal proteins and with attention to the rapid spoilage, it is necessary to open a new window in rapid and economic control of these products. Therefore we have carried out a comparative study on 30 sample of bony marine fish used in the area of canneries and retail in Tehran since 1998-1999 with three methods of assessing their quality control i.e. determination, Marco kjeldal determination of total volatile nitrogen (T.V.N) aerobic psychrotrophic bacterial total count (T.C). The content of TMA was affected significantly (P<0.05) by the bacterial total cout of the samples in this study. Regression equation was derived rellating TMA to TC.
