چکیده
زمینـه مطالعه: میگو منبع غنی از پروتئینها، پپتیدها، اسیدهای آمینه، مس، منیزیم، ید و روی بوده و مصرف این محصول روبه گسترش میباشد. متأسفانه در چند سال اخیر جیوه از راههای مختلف و به مقادیر بسیار زیادی وارد اکوسیستمهای آبی و دریایی شده که به دلیل تجمع بیولوژیک، ماندگاری بالا و خطرات مسمومیت آن؛ قابل تامل و بررسی خواهد بود. هدف: تعیین سطح آلودگی به جیوه در میگوهای عرضه شده در سطح شهر تهران و مقایسه آن با حد مجاز بین المللی. روش کار: بدین منظور 19 عدد نمونه به صورت تصادفی از نقاط مختلف شهر تهران جمع آوری و مورد بررسی قرار گرفت. میزان جیوه با استفاده از دستگاه Mercury Analyzer مدل 80 DMA و روش کار استاندارد 6722ASTM D اندازه گیری شد. نتایج به دست آمده با استفاده از تحلیل واریانس یکطرفه مقایسه شدند. نتایج: نتایج حاصل نشان داد که به طور میانگین مقدار جیوه در عضله نمونههای مورد آزمـایش g/gh59/8 ± 44/76 با توجه به اینکه میزان جیوه کمتر از حد مجاز WHO و g/g( FAOh500) بود. نتیجه گیری نهایی: مصرف میگوهای عرضه شده در سطح شهر تهران از نظر میزان جیوه بلامانع بوده و خطرات جدی بر سلامتی انسان ندارد.

BACKGROUND: Mercury contamination of aquatic ecosystem, due to its bioaccumul-ation, persistence, high risk and poisoning has become a concern in recent years. Consumption of shrimp as a rich source of protein, peptides, amino acid and minerals (Cu, Mg, Zn, I) is growing up. OBJECTIVES: The purpose of the present study is to determine the mercury content of shrimp in Tehran market and compare this with international limits. METHODS: For this purpose, 19 samples were collected randomly from different retail markets in different parts of Tehran and their mercury content was measured by Mercury Analyzer DMA-80 with standard method ASTM D6722. The results were compared using one-way analysis of variance (ANOVA). RESULTS: It was found that, the mean level of mercury in muscles of all examined samples was 76.44±8.59 ppb, that is in agreement with the existing data and lower than the WHO and FAO guideline (500 ppb). CONCLUSIONS: Shrimp consumption considering its mercury content is permitted in Tehran and has no serious risk to human health.
