تغییرات عملکرد، پارامترهای کمی و کیفی گوشت و فراسنجههای خونی جوجه های گوشتی تحت آسیت القایی سرمایی

چکیده

 
زمینه مطالعه: آسیت یکی از بیماری‌های متابولیک است که اثرات مضری بر جوجه‌های گوشتی دارد.
هدف: این آزمایش به منظور بررسی اثرات آسیت القایی با سرما بر عملکرد، پارامترهای کمی و کیفی گوشت و برخی فراسنجه‌های خونی جوجه‌های گوشتی انجام شد.
روش کار: برای این منظور، از 300 قطعه جوجه گوشتی یک روزه سویه راس در دو تیمار شاهد (تحت دمای معمولی) و آسیتی (تحت تنش سرمایی) با 5 تکرار (30 قطعه در هر تکرار) استفاده گردید.
نتایج: آسیت القاشده با سرما باعث کاهش عملکرد، وزن لاشه و گوشت سینه و ران گردید (05/0>P). بعلاوه آسیت باعث افزایش دمای مقعد و روشنی (L) و قرمزی (a) گوشت ران در سن 42 روزگی گردید (05/0>P). آسیت سرمایی باعث کاهش آنزیم‌های خونی گلوتاتیون پراکسیداز و سوپراکسید دیسوموتاز، اسید اوریک و آلبومن خون ومالون دی الدئید در سن 42 روزگی شد (05/0>P). افزایش میزان هماتوکریت و هموگلوبین خون نیز در جوجه‌های آسیتی مشاهده شد (05/0>P).
نتیجهگیری نهایی: به طورکلی، آسیت القایی ناشی از سرما از طریق افزایش پراکسیداسیون و کاهش آنتی‌اکسیدان‌های خون سبب افزایش روشنی گوشت در جوجه‌های گوشتی می‌گردد. همچنین آسیت از طریق افزایش متابولیسم پایه سبب افزایش دمای مقعد می‌گردد.

BACKGROUND: Ascites is a metabolic disease that has negative effects on broiler chickens.
OBJECTIVES: This study was performed to investigate the effect of cold induced ascites on performance, meat quality and quantity indices and some blood indices of broiler chickens with cold induced ascites.
METHODS: Three hundred one-day-old female chicks (Ross 308) were used in a completely randomized design with two treatments of control (under normal temperature) and ascitic (under cold stress) with five replicates and 30 birds per each replicate.
RESULTS: The results showed that cold-induced ascites caused the lower performance, carcass weight and thigh and breast meat (P<0.05). Furthermore, ascites caused the increased anus temperature and thigh lightness (L) and redness (a) at day 42 of age (P<0.05). Cold induced ascites decreased the enzymes of glutathione peroxidase and superoxide dismutase, uric acid, albumen and malondihaldehyde in blood at day 42 of age (P<0.05). The higher blood hematocrit and hemoglobin were observed in ascetic birds (P<0.05).
CONLUSIONS: In conclusion, cold induced ascites increase the meat lightness through the increased peroxidation and decreased antioxidants of the body. Moreover, ascites cause the higher anus temperature by increasing the body basal metabolism.
